Honey Balsamic Chicken Salad Recipe
Ingredients:
2 cups cooked chicken, shredded or chopped
1/4 cup balsamic vinegar
2 tablespoons honey
2 tablespoons olive oil
Salt and pepper, to taste
4 cups mixed greens
1/2 cup cherry tomatoes, halved
1/2 cup sliced cucumber
1/4 cup sliced red onion
1/4 cup crumbled goat cheese
1/4 cup chopped walnuts
Instructions:
In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper to make the dressing.
In a large bowl, combine the cooked chicken, mixed greens, cherry tomatoes, sliced cucumber, sliced red onion, crumbled goat cheese, and chopped walnuts.
Pour the dressing over the salad and toss to coat.
Serve the chicken salad immediately, or refrigerate for later.
