Ingredients:
1 block firm tofu, drained and cubed
2 tablespoons cornstarch
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
3 cloves garlic, minced
1/2 teaspoon grated ginger
1/4 teaspoon red pepper flakes
2 cups mixed vegetables (e.g. bell pepper, onion, broccoli, snap peas)
Salt and pepper, to taste
Cooked rice, for serving
Instructions:
Toss the cubed tofu with the cornstarch in a large bowl until the tofu is evenly coated.
In a small bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes to make the sauce.
Heat a large skillet over medium-high heat and add the tofu cubes.
Cook the tofu until crispy and golden brown, about 4-6 minutes per side.
Remove the tofu from the skillet and set aside.
Add the mixed vegetables to the skillet and cook until tender, about 5-7 minutes.
Pour the sauce over the vegetables and stir to combine.
Add the tofu back to the skillet and stir to coat with the sauce.
Season with salt and pepper to taste.
Serve over cooked rice and enjoy!
