Honey Tiramisu Recipe

Honey Tiramisu: where Italy's cherished dessert dances with the golden nectar of nature, creating a melody of flavors that lingers in memory

Ingredients:

  1. 1 cup (240 ml) strong brewed coffee, cooled to room temperature

  2. 3 tablespoons honey, divided

  3. 3 large egg yolks

  4. 1/2 cup (120 ml) milk

  5. 3/4 cup (180 ml) heavy cream

  6. 8 oz (227 g) mascarpone cheese, softened

  7. 1 teaspoon vanilla extract

  8. 24 to 30 ladyfingers (savoiardi)

  9. Unsweetened cocoa powder, for dusting

  10. Dark chocolate shavings (optional)

Instructions:

  1. Coffee Mixture: In a shallow dish, combine the brewed coffee with 1 tablespoon of honey. Mix well and set aside.

  2. Honey Custard: In a medium saucepan, whisk together the egg yolks, milk, and 2 tablespoons of honey. Cook over medium heat, stirring constantly, until the mixture thickens slightly and can coat the back of a spoon. This should take about 5-7 minutes. Remove from heat and let it cool.

  3. Mascarpone Mixture: In a large mixing bowl, whip the heavy cream until stiff peaks form. Gently fold in the softened mascarpone cheese and vanilla extract until smooth. Gradually fold in the cooled honey custard until well combined.

  4. Assembly: Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soggy. Arrange a layer of dipped ladyfingers at the bottom of a serving dish.

  5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and then the remaining mascarpone mixture.

  6. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

  7. Before serving, dust the top with unsweetened cocoa powder and garnish with dark chocolate shavings if desired.

Enjoy your honey-infused Tiramisu!

Honey and Tiramisu:

While traditional Tiramisu recipes use sugar as a sweetener, the incorporation of honey is a delightful twist that brings a new depth of flavor to the dessert. Given Italy's longstanding relationship with honey, it's not surprising that modern chefs and home cooks alike would experiment by blending the rich, nuanced flavors of honey with the classic components of Tiramisu.

Incorporating honey into Tiramisu not only adds a unique sweetness but also pays homage to Italy's rich culinary history, bridging the gap between ancient traditions and contemporary tastes.
